Oven-baked Lamb Rack With Capsicum Cider and Oven-baked Red Onion
3 ribs lamb rack
3 red onions
1 green capsicum
1 red capsicum
1 yellow capsicum
Tomato salsa
Lamb reduction
Chopped onion and capsicum. Pre-heat a casserole pot and braise the chopped onions, capsicum and tomato salsa. Season with salt and pepper.
Wrap red onions in aluminum foil and bake in oven for 15 mins.
Sear lamb in frying pan till brown and bake in oven for 5 to 6 mins.
Put lamb in centre of plate and arrange salsa and onions around it. Drizzle with lamb reduction sauce.
